Vincotto is a mature vinegar made from boiled grape juice, similar to balsamic vinegar, but using the unique Southern Italian grape varieties Negroamaro and Black Malvasia. It is boiled for at least 24 hours, concentrated to one-fifth, then aged mother vinegar and fresh raspberry juice are added. It is then aged in wooden barrels for at least 4 years. No caramel coloring, preservatives, sugar, or artificial flavorings are added, preserving the natural sweetness and refreshing acidity of the grapes – a classic and excellent Southern Italian flavor! It has a wide range of uses, suitable for grilled or fried fish or meat, raw beef, soups, salads, cheese, fruits, ice cream, etc. The Calogiuri Family has lived in Lecce, a city in the Puglia region of Southern Italy, for over 600 years. The warm Mediterranean climate and Mediterranean winds here are ideal for the growth of certain drought-resistant crops, resulting in fully ripe and exceptionally sweet and delicious fruit. In 1825, Mr. Carojuri carried forward his family’s traditional secret recipe and registered the name Vincott, passing on this classic southern Italian flavor for six generations and selling it all over the world!
