Vincotto is a mature vinegar made from boiled grape juice, similar in method to balsamic vinegar, but using grape varieties unique to Southern Italy, Negroamaro and Black Malvasia. It is simmered for at least 24 hours, reduced to one-fifth, then aged mother vinegar and fresh fig juice are added, and it is aged in wooden barrels for at least 4 years. It contains no added caramel coloring, preservatives, sugar, or artificial flavorings, fully preserving the natural sweetness and refreshing acidity of the grapes—a classic and exquisite flavor of Southern Italy! It has a wide range of uses, suitable for grilled or fried fish or meat, raw beef, soups, salads, cheese, fruits, ice cream, and more. The Calogiuri Family has lived in Lecce, a city in the Puglia region of Southern Italy, for over 600 years. The warm Mediterranean climate and Mediterranean winds here are ideal for the growth of certain drought-resistant crops, resulting in fully ripe and exceptionally sweet and delicious fruit.
