Dill, also known as sage, is the only plant in the genus *Dill* of the family Apiaceae. It is an annual herb native to West Asia, later spreading westward to the Mediterranean coast and various parts of Europe. Today, the Mediterranean and Eastern Europe are its main production areas. It resembles fennel in appearance, growing to about one to four feet tall, with small yellow flowers distributed in an umbel-like pattern and needle-like leaves. It is primarily used in fish cooking to remove the fishy smell, and is also used in soups, pickles, bread, and preserved foods. Its fruits and seeds are harvested before maturity and can be extracted into essential oil for consumption, or dried to become spices. Its leaves are also used as an herb, which can be eaten fresh or dried; they have a pleasant aroma and are often used in fish cooking.
