Basil, also known as clove basil, is a type of culinary herb, mostly annuals. In Minnan dialect, it’s called “nine-layered pagoda,” and in Hakka dialect, it’s called “seven-layered pagoda.” In the Chaoshan region of Guangdong, it’s called “Jin Bu Huan,” in northern Anhui, it’s called “Xiang Hua Zi,” and in some parts of northern China, it’s called “Lan Xiang.” Basil from mainland China and Taiwan differs slightly in taste and appearance from basil from other countries. For example, Italian cuisine often uses “sweet basil” to make pesto, which has a less bitter taste and milder aroma. Basil has been cultivated in India for 5000 years. It is now an important ingredient in Italian and South Asian cuisine. The leaves have a strong, anise-like aroma that can enhance the flavor of dishes, such as sprinkling basil leaves on three-cup chicken or Vietnamese pho, or adding them during baking or frying.
