Type: French/Semi-soft/Pasteurized or Unpasteurized Goat Milk/45% Milk Fat. The cheese is pierced with a straw to prevent deformation and allow it to breathe. Since January 1999, the AOC has mandated that even the producer’s number must be marked on the straw. This smooth cheese has a slightly acidic taste and pairs well with white wines such as Sauvignon Blanc and Sancerre.
