Type: French/Washed and soaked cheese/Pasteurized milk/50% milk fat content. The main characteristic of this cheese is its indentation at the top, a natural collapse that occurs during aging due to the cheese not being turned over. Pouring champagne into the indentation enhances its unique flavor. Rind color changes during aging: milky white → yellow → orange-red → reddish-brown. The flavor is milder than Epoisses, slightly salty, and has a stronger cheese flavor. It can be served on a cheese plate or added to salads. Pairs well with Bordeaux red wine, Marc de Bourgogne, and champagne.
