Sardinian pearl rice noodles are made from 100% durum wheat flour and are one of the oldest types of pasta in Sardinia. The original word, Sa Fregula Sarda, is a Sardinian dialect, but today Fregole or Fregola are the most commonly known and used. The traditional method of making pearl rice noodles involves hand-kneading each irregular grain in a ceramic bowl, a very time-consuming and labor-intensive process, similar to large-grained custard millet. However, after drying and roasting, the aroma is richer, and the texture is chewy and full-bodied. Casa del Grano has developed and recreated this ancient hand-kneading process to produce the perfect Sardinian pearl rice noodles. It is recommended to cook for 8-10 minutes and is suitable for pairing with seafood dishes, making risotto, salads, or soups.
