Italian/Hard/Sheep’s milk cheese. Named after the Pecorino Romano region, this cheese is made using rennet from sheep raised in a single production area. It has a thin, hard, light ivory-white crust, is 25-35cm tall, and weighs 20-35kg. Slightly spicy and salty, it’s suitable for gluing or slicing into thin pieces and adding to dishes for flavor. It’s an essential ingredient in Carbonara (bacon and egg yolk pasta). Must be ordered by the box.
