Aged for 18-30 months. It has a firm yet crumbly texture, with crystalline granules distributed throughout the cheese’s inner layers. It crunches when bitten and has a slightly salty, slightly roasted nutty flavor. It can be enjoyed on its own or paired well with a fresh salad of arugula, tomato, and olive oil, along with plenty of balsamic vinegar. Must be ordered by the box.
