Occelli’s original milk cheese uses hand-harvested Piedmont mountain pasture grasses in spring, with a higher proportion of flowers than other grasses. It is then soaked in Baladin craft beer, giving the cheese a floral aroma and a subtle beer flavor. The texture is delicate and it’s perfect on its own or paired with fruity white spirits or craft beers.
