This is a fresh cheese with approximately 40% milk fat, produced year-round throughout France. It’s typically eaten sprinkled with fine sugar, but can also be seasoned with salt or pepper. It can also be served as a dessert with jam or honey. White cheese comes in two types: the drier Campagne and the softer Bachu. Making white cheese is quite simple: heat fresh milk, add rennet, and stir until it solidifies. Then, without breaking the curd, gently scoop it into molds and drain off the excess water.
