Type: British Origin/Pasteurized Milk/Blue Semi-Soft Cheese/35% Milk Fat. Along with Rockford Fosgate and Guggenzo, it is considered one of the world’s three major blue cheeses. Rich with a hint of spiciness and bitterness, and due to its low salt content, it leaves a honey-like sweetness in the finish. Pairs well with sherry and port. Typically enjoyed with walnuts, soda crackers, biscuits, or bread.
