Invented in the 1930s by Parisian cheese merchant Henri Androuet and named after the renowned contemporary gourmet Jean Anthelme Brillat-Savarin. Although it has a high milk fat content of 75%, its slightly sour taste makes it less cloying, with a silky smooth texture that melts in your mouth. It is typically aged for 4-5 weeks to develop more layers of flavor. Its flavor is slightly buttery and salty, with hints of mushroom, nuts, and truffle. Pairs well with pale ale or champagne.
