Category: Washed and soaked cheese/45-50% milk fat/unpasteurized milk. Produced in the Alsace region bordering France and Germany, it is said to have originated from the milk of cows raised in the Master Valley during the Middle Ages. Due to multiple washings, the rind is moist and has a strong aroma, but the taste is quite mild, making it perfect for pairing with beer, Gewurztraminer, or full-bodied red wines, as well as Alsatian white wines. Try pairing it with potatoes, salad greens, and chopped onions.
