Legend has it that in 1770, the King of Peru presented seeds of the San Marzano tomato as a gift to the then King of Naples, thus establishing the San Marzano tomato in Italy. Protected under the DOP (Denomination of Origin) system, the San Marzano tomato can now only be grown in the coastal region of Agro Nocerino Sarnese, between Naples and Salerno in southern Italy, which is also the basin of the Sarno River. Southern Italy enjoys up to 16 hours of sunshine in summer and is adjacent to Mount Vesuvius. The soil there is rich in minerals, fertile, and dry. Combined with the sea breeze, this unique terroir and climate gives the San Marzano tomato its rich and prominent flavor, making it the tomato variety specified for many classic Italian dishes. Characteristics: Thick flesh, few seeds, bright sweetness, and a mild, subtle acidity. Uses: Sauces for pizza, pasta, etc. Examples include: Margherita pizza and Pasta all’Amatriciana.
