Danish Blue Cheese, aged for approximately eight to twelve months, is a semi-soft cheese made from cow’s milk. Fermented with Penicillium mold, it develops a complex blue pattern on its surface. This is one of the few blue cheeses to have received EU PGI (Protected Designation of Origin) certification! Originally, Danish Blue Cheese was intended to imitate the most intense French goat’s milk cheese (Roquefort), but the final product retains its rich flavor while having a milder texture. Compared to Stilton, it is a more palatable blue cheese. Its soft texture makes it suitable for pairing with fruits such as strawberries and figs, or as a sprinkle on salads. It is also great for making sauces to drizzle over roasted vegetables.
