Parmigiano (French: Parmesan, a term popularized in the US), a globally renowned cheese sourced from a rare, exclusively certified breed, is only produced in the Emilia-Romagna region and aged according to specific processes and times; only then can the words PARMIGIANO REGGIANO be branded on the outside of a whole sachet. Red cattle, a breed recorded as early as the 4th century AD, are unique to the region, producing milk richer in nutrients than that of ordinary dairy cows; however, their production nearly disappeared due to industrialization and economic considerations.
