This soft cheese, made from pure raw goat milk, is a masterpiece showcasing the original milky aroma. The naturally occurring mold (white mold or natural gray mold) on the surface is a normal phenomenon during the aging process and is also the source of the flavor. Although it only undergoes a short aging period of 11 days, it develops an amazingly rich and full-bodied taste. The active flavors of the raw milk are perfectly preserved.
