Ras el Hanout, a Moroccan spice, is to North African cuisine what Garam Marsala is to Indian cuisine. Literally, Ras el Hanout means “Head of Shop,” implying top quality. Moroccan spices are used in dishes such as tagine, couscous, and rice dishes, and are also commonly found in Tunisian and Moroccan cuisine, used on vegetables and fish. The spice blends used in Ras el Hanout vary from brand to brand, but the red variety tends to have a much stronger flavor than the yellow variety. Typically, the ingredients in yellow Moroccan spices include: coriander, mixed curry powder, turmeric powder, chili, cumin, fenugreek, ginger, salt, and caraway. It can be used in many delicious dishes, adding flavor to soups and also as a seasoning for fish or rice dishes. Recommended dishes to pair with include: Mrouzia (a sweet and savory tagine), chickpea and tomato soup, stewed lamb, and other authentic European dishes.
