This high-fat (triple-creme) cheese from Normandy has an edible, silky white rind, a sunken interior with a slightly salty and slightly acidic white wine flavor, resembling a very full-bodied brie. Pairs well with light beer, dessert liqueur, or pear slices. Also goes well with crispy baguettes or soda crackers.
