Category: Washed Cheese/50% Milk Fat/Cow’s Milk. Originating in Burgundy, France, it was praised as the king of cheeses by the 19th-century gourmet Brissavalin. The orange-red rind is pigment produced by bacteria during aging. Washed with Marc de Bourgogne (a distilled spirit made from grape pomace used for winemaking), it has a slightly pungent aroma and typically requires at least 6 weeks of aging. It tastes slightly salty, slightly sweet, and a little spicy; the soft, mushy part can be eaten directly with a spoon. It pairs well with Abbey beer or Sauternes.
