Swiss/Hard/Washed Cheese. This cheese boasts a 700-year history and is made with a unique secret recipe. During aging, it is washed in a brine solution containing a secret blend of cider, white wine, vanilla, and spices. The rind is light brown, with a strong, spicy aroma characteristic of washed cheese, and a rich, complex flavor profile. This cheese is aged for 9 months. Must be ordered by the case.
