Pre-order item. Founded in 1978, Balik is renowned for its world-class smoked salmon. Sourced entirely by hand from pristine mountaintops in Ebersol, Switzerland, using local spring water and unique wood, the salmon is grown in incredibly pure air. It is cold-smoked using wood dried for ten years, employing traditional Russian smoking techniques in a dedicated smoking room. Only the plumpest fillet pieces, weighing over 500g, are selected for this process. The flavor is more refined and full-bodied than standard versions, with a longer finish.
