Italian balsamic vinegar is a natural balsamic vinegar made from grapes. Its origins can be traced back to the 11th-century Renaissance, when it was believed to be a cure for the plague. However, around 1980, some Italian chefs discovered that the vinegar’s uniquely rich flavor complemented modern Mediterranean cuisine, leading to its rapid global popularity. Authentic balsamic vinegar must be made in the two small towns of Modena and Reggio Emilia in northern Italy, using the grape varieties best suited for balsamic vinegar (Lambrusco & Trebbiano). After harvesting, the grapes are lightly crushed and boiled for 26-32 hours until thickened. After filtering, it undergoes fermentation and vinegar production, then is aged in wooden barrels, with the barrels changed annually to allow the balsamic vinegar to become richer, smoother, and more fruity, with a creamy texture. It contains absolutely no caramel coloring or artificial coloring, boasting the most natural flavor—a refreshing and tangy taste.
