Italian balsamic vinegar is a natural balsamic vinegar made from grapes. Its origins can be traced back to the 11th-century Renaissance, when it was believed to be a cure for the plague. However, around 1980, some Italian chefs discovered that the vinegar’s uniquely rich flavor complemented modern Mediterranean cuisine, leading to its rapid global popularity. Using grape varieties best suited for balsamic vinegar (Lambrusco & Trebbiano), the grapes are lightly crushed after harvesting and simmered for 26-32 hours until thickened. After filtering, it undergoes fermentation and acetylation, then ages in wooden barrels for several years. The small spheres contain liquid balsamic vinegar at their center. A few pearls are used to garnish food; these delicate pearls not only create a refined visual effect but also encapsulate the centuries-old flavor of Modena within a small universe. Upon tasting, the sweet and sour flavors burst on the tongue, adding rich layers of flavor to the dish.
