Italian balsamic vinegar is a natural balsamic vinegar made from grapes. Its origins can be traced back to the 11th-century Renaissance, when it was believed to be a cure for the plague. However, around 1980, some Italian chefs discovered that the vinegar’s wonderfully rich flavor complemented modern Mediterranean cuisine, leading to its rapid global popularity. Authentic balsamic vinegar must be made in the two small towns of Modena and Reggio Emilia in northern Italy, using the grape varieties best suited for balsamic vinegar (Lambrusco & Trebbiano). After harvesting, the grapes are lightly crushed and boiled for 26-32 hours until thickened. After filtering, it is fermented and vinegared, then aged in oak barrels for 12 years, with the barrels changed annually to make the balsamic vinegar richer, smoother, and more fruity, with a creamy texture. Only the highest quality balsamic vinegar, certified by the “Moderna Traditional Balsamic Vinegar Association,” can bear the “Tradizionale” label. From the grape variety and processing methods to the aging barrels and the final bottling in square-bottomed, round-bellied glass bottles, everything is strictly regulated and must pass inspection before the traditional balsamic vinegar name, bottle, label, and seal can be used. It contains absolutely no caramel coloring or artificial coloring, boasting the most natural flavor—a refreshing and tangy taste. It pairs perfectly with smoked salmon, risotto, various meats, seafood, foie gras, and even cheese, vanilla ice cream, fruit, dark chocolate, and any dessert—achieving a perfect balance of flavors!
