Don Giovanni 25 Year Balsamic DOP
100ml*2/box
Italian balsamic vinegar is a natural balsamic vinegar made from grapes. Its origins can be traced back to the 11th-century Renaissance period, when it was believed to be a cure for the plague. However, it wasn’t until around 1980 that some Italian chefs discovered that the vinegar’s wonderfully rich flavor complemented modern Mediterranean cuisine, and thus it quickly became popular worldwide. Authentic balsamic vinegar must be made in the two small towns of Modena and Reggio Emilia in northern Italy, using the grape varieties best suited for balsamic vinegar (Lambrusco & Trebbiano). After harvesting, the grapes are lightly crushed and boiled until thickened, filtered, fermented, and then aged in oak barrels for 25 years. Traditionally, different types of oak are used each year: oak, chestnut, cherry, ash, mulberry, and juniper. This process makes the 25-year-old balsamic vinegar richer, smoother, and more complex in flavor, with a creamy texture. Only the highest-grade balsamic vinegars certified by the Modena Traditional Balsamic Vinegar Association can bear the word “Tradizionale”. From the grape variety, production process, aging barrels to the final bottling in square-bottomed, round-bellied glass bottles, everything is strictly regulated and must pass inspection before the traditional balsamic vinegar name, bottle, label, and seal can be used and it can be bottled and sold. This extra-grade balsamic vinegar, aged 25 years in traditional barrels, is specially labeled “Extra Vecchio” by the association. It contains absolutely no artificial colors, caramel colors, colorings, or preservatives, possessing the most natural flavor, with a refreshing and tangy taste. It pairs perfectly with smoked salmon, risotto, various meats, seafood, foie gras, and even cheese, vanilla ice cream, fruit, dark chocolate, and any dessert—the flavors are perfectly balanced!
