Tenant farmers rented land from the church and paid rent in the form of cheese corresponding to the number of monks, hence the name. It has a moist crust and a strong aroma, with a firm texture, classifying it as a semi-hard cheese. Using a turntable cheese slicer, the resulting cheese flowers are beautifully presented. It melts in your mouth, with a rich and aromatic flavor, featuring fruity and nutty notes. The cheese flavor is intense; the thinner the slice, the better, offering a double enjoyment for both the eyes and the palate.
