This raw ham is made from a whole piece of pork neck meat, cured and aged. The pork comes from the carrot pigs raised at Yong Lung Ranch’s Huatianxi Pig farm. During their nine-month rearing period, they are fed a large amount of natural ingredients such as carrots and sweet potatoes, resulting in a meat flavor with nutty and creamy notes. It is cured with coarse salt, black pepper, nutmeg, rosemary, juniper berries, and other spices, wrapped in sausage casings and shaped into a cylindrical form, then bound with cotton rope using traditional methods and hung to age for up to six months. Thinly sliced Coppa has a smooth, snow-white marbling on the outside and a chewy, lean interior. It’s a savory and refreshing pork neck meat ham.
