The highest grade, Bellota, comes from Iberian pigs raised free-range in the forest, feeding on wild plants, mushrooms, and fruits. They begin their fattening period at eight months old, coinciding with the ripening of acorns. From approximately late September to March of the following year, driven by their genetic predisposition—”only eating acorns”—these pigs with their keen sense of smell consume large quantities of acorns, resulting in the exquisite flavor of Bellota grade Iberian pork. It is available seasonally.
