Fleur de Sel, a top-grade French sea salt, is known as the “Queen of Sea Salts” and is considered the finest for highlighting the original flavor of ingredients. Camargue, located in southern France, is a world-class protected wetland covering 930 square kilometers and is the largest river delta in Western Europe. Fleur de Sel is a white, translucent crystal that floats on the sea surface like thin ice, with a slightly moist texture and gray and pink hues. It is harvested only from mid-July to mid-August each year. Its composition is purer than regular sea salt, but the quantity is extremely limited, only 1/30th of the yield of regular sea salt. On average, less than 500 grams of fleur de Sel crystallize from every 50 square meters of salt pan, and the entire harvest must be done by hand, making the process incredibly precious.
