Sardinian gnocchi is made from 100% durum wheat flour and is one of the oldest types of pasta on the island of Sardinia. The original word, Is Malloreddus, is a Sardinian dialect word, but Gnocchetti Sardi or Sardinian Gnocchi are now more commonly known and used. Traditionally, Sardinian gnocchi is hand-pressed into its unique shape on woven willow or reed baskets; nowadays, it is mostly made using grooved wooden boards. La Casa del Grano uses a traditional copper mold to press the dough and then slowly dries it, creating a rough, uneven surface that not only allows the sauce to adhere better but also enhances the aroma and flavor. It is recommended to cook for 10 minutes and is best enjoyed simply with sausage and tomato sauce, pécrino cheese, or saffron.
