Camargue Fleur comes from the Camargue National Park Reserve in southern France, located in the largest river delta in Western Europe, boasting precious salt pans and ecological conservation areas. Camargue Fleur is hard-won; only during the summer, with the cooperation of wind and sun, can the salt pans slowly accumulate into beautiful, thin-ice-like crystals on the water’s surface. Less than 500 grams of fleur are crystallized from every 50 square meters of salt pan, making it precious and fragile, and requiring hand-harvesting. It has a naturally slight dampness and a unique, elegant flavor.
