Emmental is a semi-firm, porous (also known as “cheese eyes”) classic cheese, often seen in cartoons. Produced in Switzerland, France, and Germany, it originated in the small town of Emmental in west-central Switzerland. It has a firm, slightly hard texture and a beautiful pale yellow color. It boasts a unique aroma of floral, fruity, and nutty notes.
