Type: Italian/Pasteurized milk/Blue soft cheese/48% milk fat content. Divided into two types based on aging: Gorgonzola Dolce (sweet) and Gorgonzola Naturale/Picante (spicy). It is one of the oldest and most traditional blue cheeses. It has a soft, slightly grainy texture and a hint of nutty flavor. Pairs well with Bordeaux red wines, Zinfandel, and Sauternes. It is also frequently used in cooking.
