A DOP-exclusive hard cheese made from fresh milk. Grown in the Grana Valley of Piedmont at an altitude of 1000 meters. The curd is repeatedly crushed, hand-shaped, and aged at high altitude for two months. This creates a unique texture that is slightly dry on the palate, then spreads throughout the mouth, leaving behind crystalline, multi-layered flavors. Pairs well with red wine, aged red wine, or craft beer. Can also be used as a dumpling filling or shaved onto dishes.
