Suitable for making traditional fresh pasta, dumplings, and pressed pasta, whether handmade, made with a mixer, or using an automatic pasta machine. The resulting pasta retains its natural yellow color for several days without turning gray. The coarse texture allows for better absorption of sauces and it can withstand secondary cooking with sauces. It mixes well with durum wheat flour.
