This rice variety is larger and longer. It undergoes soaking, boiling, and steaming processes before being dried and milled. This special process gives the rice its orange-yellow color and retains the nutritional components of brown rice, resulting in a low glycemic index (low GI). While popular in Europe and America, it is often referred to as “parboiled rice” in Taiwan. Its ability to withstand long cooking times allows it to absorb a lot of broth while remaining chewy and firm, concentrating all the flavor in the grains. Therefore, it is particularly suitable for making Spanish paella.
